The Foodlink Community Café is proud to share that a few of the new menu items on our Winter Menu are now fresher than ever, with ingredients sourced directly from our very own Community Farm! Through the help of our staff farm specialist, John, the café staff was able to preserve produce from the growing season to incorporate in two recipes used at our Community Café.
First, the Ol’ Reliable seasonal sandwich features a horseradish mayonnaise that contains fresh horseradish from the farm. Class 8 Foodlink Career Fellows learned how to grate and pickle the horseradish. From there, the grated horseradish is then combined with mayo, lemon, salt, and a pinch of sugar to make a tangy and slightly spicy sauce that pairs beautifully with the caramelized onions, provolone, and roast beef on sourdough that make up the Ol’ Reliable.
Second, the café switched from canned pizza sauce to one made in house using crushed tomatoes that features oregano that John delivered straight from the farm. Class 7 Foodlink Career Fellows learned how to preserve the oregano through dehydration in Foodlink’s rationale ovens. This housemade product not only is a cost-saver, it also provides a training opportunity for our Fellows.
Even better, it is an absolutely delicious addition to our pizzas!
